So healthy milkshakes it is! You don't have to compromise that delicious and satisfying classic milkshake flavor and texture either.
This strawberry milkshake recipe is made with nutritious and simple ingredients and is so smooth and satisfying. It's even more nutrient dense and creamy if you add the optional pastured egg yolks and collagen powder.
This is the perfect drink to enjoy on hot summer days in strawberry season.

Ingredients
Strawberries - Rich in many vitamins and minerals and high in antioxidants as well as fiber, strawberries add much nutritional value to the milkshake! To avoid nasty chemicals, choose homegrown or organic strawberries. If you can't get these, be sure to wash your strawberries very well!
Coconut milk - Coconut milk is a rich, creamy substitute for dairy, but it's very enjoyable even if you can drink cow's milk! Coconut milk is high in fats and many vitamins and minerals, including copper, manganese, selenium, iron and folate. It may improve heart health, reduce inflammation and fight viruses!
Look for high quality coconut milk with minimal additives and without BPA (a chemical that can lead to cancer and reproductive issues) in the can lining. This is a good option. Hint: If it costs $0.88 for a can, it's probably not the best brand to buy...
Maple syrup - Maple syrup is natural and also contains a small number of vitamins and minerals. I always use the least amount of a natural sweetener possible to create a delicious end result! Of course, with a milkshake you can easily add a little more if it's not sweet enough for you.
Collagen (optional) - I use grass-fed collagen, but you could use your favorite protein powder or just leave it out. Adding protein to the shake will help prevent a blood sugar spike. Blood sugar spikes can result in fatigue, headaches, and regular blood sugar spikes can cause long term health issues.
Egg yolks (optional) - These add creaminess and extra nutrients to the milkshake. Egg yolks are high in many essential nutrients, such as vitamin A, vitamin D, vitamin E, vitamin K, and B-complex vitamins like vitamin B12, riboflavin, folate, iron, selenium, and phosphorus. They are also very high in choline and healthy fats! Be sure to use raw egg yolks only from high-quality, fresh eggs obtained from a trusted source.
FAQ
You need to have a frozen ingredient to blend up in order to make the milkshake consistency, so you can either freeze the fresh strawberries (or other fresh fruits if you're experimenting) you have (after washing them) or pour half of your coconut milk into ice cube trays, freeze and then blend those with the fresh, unfrozen strawberries, the remaining coconut milk and other ingredients.
Any sweetener can be used. I recommend natural liquid sweeteners such as maple syrup, honey or date syrup. If your sweetener of choice is a granulated sugar such as coconut sugar or cane sugar, there may be a slightly grainy texture in the milkshake.
You can replace some or all of the strawberries with a different fruit to experiment with different flavors or use what you have. This is a great base recipe!
Yes! This recipe is vegan if maple syrup or date syrup is used to sweeten and if the collagen and egg yolks are left out. You can use a plant-based protein powder in place of the collagen if you'd like more nutrients and protein.
It's not ideal to make milkshakes ahead of time, however if you really want to, here are some tips. You can store milkshakes in the fridge for up to 2 hours. If you want to store them longer than that, cover them with plastic wrap and place them in the freezer. Move them to the fridge 1-2 hours before you want to consume them. You may need to brake and stir them up a bit, but they should be a drinkable consistency at that point.
Substitution options
Collagen - Use any neutral, vanilla or strawberry flavored protein powder or just leave it out.
Coconut milk - Use any dairy or non-dairy milk, or even just filtered water, although this option won't be as creamy. Use whole milk, cashew cream or even heavy cream as an alternative for a creamy strawberry milkshake.
Maple syrup - Use any liquid sweetener, I recommend honey or date syrup.
Strawberries - Substitute some or all of the strawberries with different fruit or berries for a different flavored milkshake.
Topping ideas
Whipped cream - Top with whipped heavy cream or whipped coconut cream!
Sliced strawberries - Looks beautiful on top of a cloud of cream!
Freeze-dried strawberry powder - Whizz up some freeze-dried strawberries in your blender or food processor for a pretty pink dusting to sprinkle on top. You could even mix some into the milkshake for even stronger strawberry flavor.
Orange zest - Strawberry and orange taste delicious together, so try adding 1-2 teaspoons of orange zest.
Chocolate shavings - Chop up a chocolate bar or some chocolate chips and sprinkle on top of whipped cream for a fancy look.
Chocolate sauce or caramel sauce - Add a drizzle of chocolate syrup or strawberry syrup over the whipped cream to dress it up!
Tips
- Use a strong, powerful blender for a smooth end result.
- For best results, use fattier milk. Full-fat coconut milk or cow's milk will result in a very creamy texture. You can use others like oat milk or almond milk, but the homemade strawberry milkshake won't be as rich and creamy.
- If the milkshake isn't as thick as you'd like, you can blend in some ice cubes.

How to make a strawberry milkshake without ice cream
Ingredients:
- 1 can (400ml) full fat coconut milk
- 1½ cups frozen strawberries
- ½ teaspoon vanilla extract
- 1-2 tablespoon maple syrup (or honey), to taste
- ¼ cup collagen powder or protein powder (optional)
- 2 pasture-raised egg yolks (optional)
Instructions:
Refrigerate coconut milk overnight or for at least 4 hours. (Not 100% necessary, but will result in a thicker milkshake.)
Blend all ingredients in a high speed blender until completely smooth. Taste test and add more honey or maple syrup for sweetness, if desired.
Pour into a tall glass and enjoy immediately!
Makes enough for 2 tall glasses.
